Strawberry Spinach Salad

It wasn’t until I sat down to write this post that I realized I should have taken a photo of myself laughing alone with this salad.  ”I am so empowered and STOKED!  Salad will freeeeee meeeeeee.”  Hilarious.

Really, though.  This is a delicious salad.   The strawberries are sweet.  The spinach is wholesome.  The almonds are crunchy.  The dressing is incredibly well-rounded and full of unexpected, more-complex-than-the-usual flavor.

Just, for the love of gosh…  Let’s eat other things, too.  Do you feel me, or what?

Strawberry Spinach Salad

2 tablespoons sesame seeds

1 tablespoon poppy seeds

1/4 cup white sugar

1/2 cup olive oil

1/4 cup balsamic vinegar

1/4 teaspoon paprika

1/4 teaspoon Worcestershire sauce

1 tablespoon minced onion

10 ounces fresh spinach – rinsed and dried

4 cups sliced strawberries (blueberries are delicious in this, also)

1/4 cup slivered almonds

We put all the dressing ingredients (everything but the spinach, strawberries and almonds) in a jar.  Layered like the Earth!  Complex.

Shake it up.

Pour over your salad just before serving.

Take it on a picnic and eat quickly.  That shouldn’t be a problem.
